Turkey Pasta Primavera

When you make this dish, your family may not even know that it is a turkey leftover! For pasta lovers everywhere – this is a definite must!

Turkey Pasta Primavera:

2 cups of shredded cooked turkey

1 cup of uncooked penne pasta

8 fresh asparagus spears, trimmed and cut into 1-inch pieces

2/3 cup of carrot, julienned

3 tablespoons butter

4 large fresh mushrooms, sliced

1/2 cup of chopped yellow summer squash

1/2 cup of chopped zucchini

1 medium tomato, chopped

1 envelope of Italian salad dressing mix

1 cup of heavy whipping cream

1/2 cup of grated Parmesan cheese

  • Cook pasta according to package directions.
  • In a large skillet, saute asparagus and carrot in butter for about 3 minutes.
  • Add the sliced mushrooms, yellow squash and zucchini and saute until crisp-tender.
  • Stir in the turkey, tomato, dressing mix and cream.
  • Bring to a boil; cook and stir for 2 minutes.
  • Drain pasta; add to vegetable mixture and gently mix to combine.
  • Sprinkle with cheese and gently mix again.

Old Fashioned Turkey Pie

This is an old time favourite! You can prepare it, bake it and freeze it for later – if you don’t feel like serving “something turkey”so close after the holidays. I have tired it both way – baked and then just defrosted and re-heated in the oven, or freezing it unbaked and then baking it when ready to serve. Either way – that little work right now rewards you with quick, easy and delicious dinner!

Old Fashioned Turkey Pie:

4 cups cubed of cooked turkey

2 medium potatoes, peeled and cut into 1-inch pieces

3 medium carrots, cut into 1-inch slices

1 medium onion, chopped

1 celery rib, diced

2 tablespoons of butter

1 tablespoon of olive oil

6 tablespoons  of all-purpose flour

3 cups of chicken broth

2/3 cup of frozen peas

1/2 cup plus 1 tablespoon of heavy whipping cream, divided

1 tablespoon of minced fresh parsley

1 teaspoon of garlic salt

1/4 teaspoon of pepper

1 package (15 ounces) refrigerated pie pastry

1 egg

  • In a large saucepan, saute the potatoes, carrots, onion and celery in butter and oil until tender.
  • Stir in flour until blended and gradually add broth.
  • Bring to a boil, cook and stir for 2 minutes or until thickened.
  • Stir in the turkey pieces, peas, 1/2 cup cream, parsley, garlic salt and pepper.
  • Spoon into two ungreased 9-in. pie plates with the bottom crust in place.
  • Roll out pastry to fit top of each pie and place over filling.
  • Trim, seal and flute edges.
  • Cut out a decorative center or cut slits in pastry.
  • In a small bowl, whisk egg and remaining cream; brush over pastry.
  • Bake at 375° for 40-45 minutes or until golden brown. Let stand for 10 minutes before cutting.

If you are using frozen unbaked pie:

Remove from the freezer 30 minutes before baking. Cover edges of crust loosely with foil; place on a baking sheet. Bake at 425° for 30 minutes. Reduce heat to 350°; remove foil. Bake 55-60 minutes longer or until golden brown.

This dish will taste just like your Thanksgiving dinner! Or very close to it at least. Again – you can make it tonight or use turkey meat you have saved in your freezer – you will not be disappointed!

Best Ever Turkey Casserole:

4 cups of cubed cooked turkey

6 medium potatoes, peeled and cut into chunks

1-1/4 cups of chopped celery

3/4 cup of chopped onion

1/2 cup butter, cubed

6 cups of unseasoned bread cubes

1 teaspoon of poultry seasoning

1/4 teaspoon of sage

1 cup of chicken broth

2 cans of condensed cream of chicken soup, undiluted

1 teaspoon of garlic powder

3/4 cup sour cream, divided

4 ounces of softened cream cheese

1/2 teaspoon of pepper

1/4 teaspoon of salt

1-1/2 cups of shredded cheddar cheese

  • Place potatoes in a large saucepan and cover with water, bring to a boil.
  • Reduce heat; cover and cook for about 15 minutes or until tender.
  • In another large skillet, saute celery and onion in butter until tender. Remove from the heat.
  • In a large bowl, combine the stuffing cubes, poultry seasoning and sage. Stir in broth and celery mixture.
  • Transfer to a greased 13-in. x 9-in. baking dish.
  • Combine the turkey, soup, garlic powder and 1/4 cup sour cream; spoon over stuffing mixture.
  • Drain potatoes and mash them. Beat in the cream cheese, pepper, salt and remaining sour cream; spread over turkey mixture.
  • Sprinkle with cheese.
  • Bake, uncovered, at 350° for 30-35 minutes .

These enchiladas make an excellent dish and chances are your family will be asking for them even when you no longer have turkey leftovers!

Turkey Enchiladas:

3 cups of cubed cooked turkey

1 cup of chicken broth

1 cup of cooked long grain rice

2 plum tomatoes, chopped

1 medium onion, chopped

1/2 cup of canned green chillies, chopped

1/2 cup of sour cream

1/3 cup of sliced, ripe olives

1/4 cup of minced, fresh cilantro

1 teaspoon of ground cumin

8 flour tortillas ( 10 inch size)

1 can (28 oz.) of green enchilada sauce, divided

2 cups of shredded Mexican cheese blend, divided

  • In a large saucepan, combine first 10 ingredients. Bring to a boil, Reduce heat and simmer, uncovered, for 20 minutes.
  • Remove from heat.
  • Place 1/2 cup of turkey mixture down center of each tortilla, top with 1 teaspoon of enchilada sauce and 12 tablespoon of cheese.
  • Roll up and place seam edge down in a greased 13 x 9 inch baking dish.
  • Pour remaining enchilada sauce over top, sprinkle with remaining cheese
  • Cover and bake at 350F for about 30 minutes
  • Uncover and bake for about 10 minutes longer – until bubbly.

These enchiladas can be easily made form turkey meat you have frozen after your Thanksgiving dinner – or save the recipe and make them later – when your family is ready for more turkey!

Storkcraft Crib Recall – Warning!

top10_recalls_toutAs I’m sure you’ve all heard by now, Tuesday the U.S. Consumer Product Safety Commission announced the largest ever crib recall.

Over 2 million Stork Craft Manufacturing Inc. cribs made from 1993 to October 2009 were recalled, including about 147,000 with a Fischer Price logo.

These cribs were recalled due to the plastic hardware on the drop side cribs can break, deform or parts can become missing. This has lead to over 100 incidents including 4 infant deaths.

When one of these plastic hinges breaks, it causes a gap between the mattress and the railing. Infants have been getting stuck in the gap, and either getting injured or in the most extreme cases, dying.

Stork Craft representatives have been interviewed and are standing by their product claiming they are safe.

I beg to differ. When children are dying and their safety is in question, I would not dub that product safe!

I have one of these recalled cribs, as do most parents I would assume. I tried to get through to the 877 number provided to order a repair kit, I could not get through. I tried to get on the Stork Craft website, but could not get on.
This is due to the fact that this is a worldwide recall I’m sure… but what am I left to do? It is advised that you stop using these cribs immediately, until you get the repair kit.

Call me paranoid, but I’m going out and getting a new crib – that is not a Stork Craft product!
This is the second recall in the last 6 months and I’m just not willing to take the chance with my son. Better safe than sorry I’d say!

This is a statement for StorkCraft:

“In the majority of incidents, the cribs were being used with broken parts, parts with pieces missing, parts that were damaged or with modified or homemade parts,” the firm said in a statement.

“In some incidents, the crib was in a state of significant disrepair. In other cases, the consumer had installed the drop-side rail upside down — contrary to the instructions that are glued to the mattress base of each crib. This causes extraordinary stress on the plastic parts that could result in breakage.”

Lame. Lame. Lame.

Parents be very aware that your child is potentially in danger and either secure or get rid of your StorkCraft crib today!

How to Set Your Thanksgiving Buffet Table

thanksgiving_buffetI have had all kinds of set-ups for festive dinners and I find that when you want to keep an informal and fun atmosphere, the buffet set up does work the best. Not only will you be able to accommodate a good number of people that way, I would compare the atmosphere to “Cocktail party mingle” – people find it easier to have a conversation with other than those seated directly beside them and to go for seconds without trying to find out just where the dish they like is located. Just in case you decided that the best way to serve your Thanksgiving feast will be to go the buffet way – I am sharing some good tips on how to do that and to have an efficiently organized table.

How to Set Your Thanksgiving Buffet Table:

Plan to arrange your serving dishes and platters at different shapes and heights – that will make it easier for your guest to access the food as well.

Nice touch is to make labels for each dish – that way, your guests will know what each dish is. And that will also give you the opportunity to make little notes is you need to – i.e. – Caution for a dish that contains nuts.

Set your table away from walls and doorways – it is a good idea to have it accessible form all sides.

It you at all can, set up a separate table for desserts, coffee and tea as well as a separate serving table for drinks.

As much as it nice to have a floral arrangements as a part of your display, be aware of heavily scented ones. You will be better off to use unscented candles, adorned with artificial flowers or seasonal decor – or just use effective dinnerware to provide for the decorating display needs.

Remember to place your plates and bowl at the beginning of the table – your silverware can be rolled into napkins and placed in a box style holder of a basket – that way nobody will forget and fork, knife or any other utensil. You may want to consider to make more sets than you need and place “spares” on the table as well – that’s for those who go for seconds and need additional utensils.

Slice only half of your turkey – then slice more as needed. That will prevent meat drying out and getting cold fast.

Keep a portion of all hot foods in your kitchen – when you replenish serving platters and bowl, you will be adding nice hot foods.

Remember to place small plates or bowl next to the serving dishes – your guest will use them to place serving utensil on – instead of putting them on your tablecloth!

shoppingcrowdsThe big U.S. holiday – Black Friday – is coming up, and I wanted to take this opportunity to explain what it is and discuss how I feel about it.

First, the day isn’t technically a holiday, however, most employees (minus retailers and bankers) get the day off to boost up the number of shoppers on that day.
It falls on the day after American Thanksgiving (the third Thursday in November) and has been a recognizable term since the 1960s.

The day is the traditional beginning of the Christmas shopping season, and stores typically decorate weeks in advance.

Some stores open at 5am just to get a jump on the day, and some bigger retailers including Sears and Best Buy have been known to open at midnight.

My thoughts on this “holiday”? I can’t believe, first of all, that people get the day off work to shop! That’s just crazy to me.

Also, I remember seeing on the news last year cases of a few people who died because they were trampled by the masses of people trying to get into stores. The one I remember clearly was a case at Wal Mart.

This is absurd, uncalled for and ridiculous if you ask me, and for that reason alone I wouldn’t participate in the day.

But, to each their own!

Tips to Get Your Garden Ready for Winter

mcknightwinterIf you read my story yesterday – the one about the now very popular Apple Cinnamon Muffins I treated myself with – you will already know that it was an absolutely beautiful morning in Ontario. After I had my muffin and coffee, I took a little walk into my garden. Can you believe I still have some beautiful blooms in there? So I took pictures you can look at and it also made me think that I should send your way a few tips ads to what I think is a good odea to remember to get done before the cold weather and snow arrive:

Here are my 10 Tips to Get Your Garden Ready for Winter:

  1. This is actually a great time to transplant small tree and shrubs if you need to. It is fine to do it when the leaves turned colour and started to fall.
  2. It is also a good time to plant new trees and shrubs – there is still time before the ground freezes deep enough to do manage to the roots.
  3. You will want to put plastic or wire mesh around new trees or shrubs to protect them from hungry animals – like rabbits or mice. When you do that, make the protective covers high enough so that it reaches above the snow line.
  4. As far as perennials go – it is up to you whether or not you cut back the dying foliage. I prefer to leave it, since I think it offers protection to new growths in early spring when you can see unexpected frost or spring snow falls that could do some damage. The other things that it does is feed hungry birds. But – some people prefer to have their garden all nice and clean in the spring – so it is your call!
  5. The one things you don’t want to do is cut roses back before the winter – leave them the way they are, just hill over the root system to prevent frost damage. In the spring, keep checking where new growth is and cut parts of the plant that have been damaged over the winter.
  6. You will also need to make sure that your shrubs and trees have a good storage of water . That means watering them until the ground freezes. This is especially important for newly planted ones – since evergreens don’t lose their “leaves”, they continue to give off water vapours through the winter months.
  7. It is a good idea to do “once over” on your flowerbeds – pulling out all the weeds. Make sure you don’t throw them into your composter – you would have them sprouting again when you use the compost next spring! You can pull out all plant remains and materials from your vegetable garden and put those into your composter.
  8. If you have leaves you don’t know what to do with, consider shredding them and using them for mulch on your flower beds. You can add some to your composter as well – it will take a season or so until they make compost, but it will be the best organic treat for your garden soil! To shred the leaves, you can just run a lawnmover over them to break them up – they will compost better.
  9. Speaking of leaves – you will want to rake them off your lawn for sure. If you don’t, they will smother your grass.
  10. And speaking of grass – not only is this the perfect time to put some winter fertilizer on. It is also time to do the final cutting. If you leave the grass long, it will likely cause some low-temperature fungi.
