Cranberry Orange Scones Recipe

I love cranberries! Not only are they good for you, they are a great addition to all kins of recipes. These scones were delicious – combination of cranberries and orange flavours is really something very special. I am going to make these for Christmas morning breakfast/brunch for sure Enjoy!

Cranberry Orange Scones:

Ingredients:

  • 1-1/2 cups of flour
  • 3 tablespoons of sugar
  • 2-1/2 teaspoons of baking powder
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 1 teaspoons finely grated orange zest
  • 5 tablespoons of cold, unsalted butter, cut into small pieces
  • ½ cup of dried cranberries
  • 2/3 cup of buttermilk (add 1-2 tablespoons more if necessary)

Directions:

  1. Preheat oven to 400F
  2. Line a baking sheet with parchment or waxed paper
  3. In a large bowl, stir together flour, sugar, baking powder, baking soda, salt and orange zest
  4. With a pastry blender or two knives, cut butter into flour mixture until it looks like coarse oatmeal
  5. Stir in dried cranberries
  6. Make a well in the centre of flour mixture
  7. Add butter milk and stir until just combined – do not overmix. Add a little more butter milk if dough is too dry to work with
  8. Transfer dough to a lightly floured surface
  9. Shape into a 8-inch round
  10. Transfer onto baking sheet
  11. Cut circle into wedges and space them about ½ inch apart (to prevent sticking, dust knife with flour)
  12. Bake until golden, about 18-20 minutes
