Cranberry Salsa Recipe

I would not have thought to use cranberries to make salsa – but I found this recipe and it sounds great! I am going to give a try and hope that you will as well:

Ingredients:

  • 1 tablespoon of vegetable oil
  • 1/2 cup of chopped red onion
  • 2 cups of fresh or frozen,thawed cranberries
  • 3 tablespoons of granulated sugar
  • 2 cloves of garlic,minced
  • 1 tablespoon of finely grated lime peel
  • 1 tablespoon of lime juice
  • 1 teaspoon of Worcestershire sauce
  • 2 teaspoons of minced fresh or canned jalapeno peppers
  • 1/4 teaspoon of salt
  • 1/4 cup of finely chopped fresh coriander

Directions:

  1. Heat oil in saucepan set over medium heat
  2. Add onion and cook, stirring occasionally for about 2 minutes
  3. Stir in cranberries, sugar and garlic
  4. Bring to boil and then reduce heat until mixture is just simmering
  5. Simmer for about 5 minutes, stirring often
  6. Stir in lime peel, lime juice,Worcestershire sauce, jalapeno and salt
  7. Remove from heat and stir in coriander
  8. Cool and store in tightly covered container for up to 1 week

Little tip: You can use this sauce to make a sweet and sour dip or baste pork or poultry with it. Just microwave the sauce, stir in little lemon juice and Dijon mustard to desired taste.
