Easter Brunch for 12 – Recipe #6 – Fresh Fruit Medley

This combination of fruits and dressing is very refreshing and suitable not just for your Easter Brunch. Again – it is something you can make the day before – that will allow you to enjoy your guests and your brunch!

Dressing:

1/4 cup of vegetable oil

3 tablespoons of honey

2 tablespoon of lemon juice

1-1/2 teaspoon of lemon juice

Fruits:

2 cups of halved seedless grapes (you can combine green and red if you want or use one colour only)

2 nectarines, sliced -or 1-1/2 cups of thawed peaches

1 orange – peeled, sliced

1 medium pineapple, rind removed, cored and cut into 1-inch pieces

1 cup of fresh raspberries

3-4 kiwi fruits, peeled and sliced

1/2 cantaloupe, peeled and cut into 1-inch pieces

Directions:

In tightly covered container, shake dressing ingredients until blended

Place fruits in a large bowl. Shake dressing again, pour over fruits and toss. Serve immediately or cover and refrigerate until serving time.
