French Onion Grilled Cheese Recipe

French Onion Grillled Cheese 001Perfect for a quick dinner – and a definite treat!

Ingredients:

  • 1 tablespoon of olive oil
  • 3 medium onions, thinly sliced (about 3-1/2 cups)
  • 1/2 of low-sodium beef broth
  • 1 thyme spring
  • 1/4 cup of dry sherry (optional)
  • 4 teaspoons of Dijon mustard
  • 8 slices of rye bread
  • 4 slices of gruyere or swiss cheese

Directions:

  1. Heat a large non-stick pan over high. Add 1 teaspoon of oil, then onions, broth and thyme.
  2. Cook, stirring often, until liquid is reduced – about 15 minutes
  3. Add sherry and continue cooking until absorbed – about 5 more minutes
  4. Remove thyme
  5. Spread Dijon mustard on 4 slices of bread
  6. Top each slice with about 1/3 cup of onion mixture and 1 cheese slices
  7. Top with remaining bread
  8. Wipe pan clean and heat over medium heat
  9. Cook 2 sandwiches at a time – about 2 minutes per side
  10. Repeat with remaining oil and sandwiches
  11. Keep grilled sandwiches warm on a foil lined baking sheet in a 200F oven
