This was the first time I made muffins that can actually be a meal. Loaded with Black Forest Ham and Cheddar Cheese – I have to tell you – they were fantastic. I used mini muffin pan to make them more like a snack and served them with homemade Chicken Noodle Soup. Great Monday night dinner! Here is the recipe for you:
Ham and Cheese Muffins:
Ingredients:
- 1-3/4 cups of flour
- 3 tablespoons of sugar
- 1 tablespoon of baking powder
- 1 cup of milk
- 3 tablespoons of vegetable oil
- 1 egg, beaten
- 1 cup of shredded cheddar cheese
- 3/4 cups of smoked ham, chopped into little pieces
Directions:
Those of you who follow my recipe already know that I start each cooking or baking task with getting all ingredients ready – believe me – if you develop the same habit, you will enjoy working in your kitchen even more!
Mix together flour, sugar and baking powder in a large bowl and milk, oil and beaten egg in a smaller bowl
Make a well in the centre of dry ingredients, pour in your milk mixture and blend together until the batter is uniform
Carefully fold in your chopped ham and shredded cheddar cheese – mix until just uniformly blended. If you find the batter too thick, add a little milk.
Spoon batter into prepared muffin pan – I used mini muffin pan to make the muffins more of a snack style. I also sprayed the pan with non-stick coating to make sure my muffins come out of the pan easily
Bake at 400F oven for about 15 – 20 minutes, or until the muffins tops are nice and golden. Remove from pan when they are slightly cooled and serve warm
