I made this bread last night – as an addition to our meat loaf dinner – and it was fantastic! I used well aged cheddar cheese and fresh green onions – the thin onion slices you add to the top really add extra flavor as well! This time, I used Steam Whistle beer – our favorite one and it worked perfectly! This is one of those – “Try it – you will love it!” recipes – very, very easy to make. Not to mention that it is fast – there is no yeast in the recipe so you don’t have to let it rise!

Beer Bread Recipe:

Ingredients:

  • 2-3/4 cups of flour
  • 1 tablespoon of baking powder
  • 1 tablespoon of sugar
  • 1-1/2 teaspoon of dry mustard
  • 1 teaspoon of salt
  • 1-1/2 cups of cheddar cheese, cut into small pieces or shredded
  • 1 green onion, finely chopped
  • 2 teaspoons of dried basil
  • 1 bottle of beer (341 ml) at room temperature
  • 1 small onion, thinly sliced

Directions:

get your ingredients organized ahead of time - easy way to cook and bake!

If you have seen any of my step by step recipes, you already know that I always recommend getting your ingredients organized first – it really helps to getting your task done faster and you will not forget to add something!

Our favorite beer these days - Steam Whistle, brewed in Toronto

This is the beer I used this time – Steam Whistle really is a great tasting beer and it worked very well in this recipe

Combine the dry ingredients first, then add the cheese and green onions and mix gently

In a large bowl, combine flour, baking powder, sugar, mustard and salt. Stir in the cheese, green onions and basil, mix until cheese pieces are coated.

Gently pour in the beer and mix until all cheese pieces are evenly coated

Pour in the beer and stir just until blended and no dry spots remain

Mix gently until all cheese pieces are covered with batter

This is what the batter looks like before you put it into the baking pan

Spoon batter into greased loaf pan and arrange onion slices on top

Spoon batter into greased 9 x 5 inch bread pan and smooth the top. Arrange onion slices on tol of the batter. If you wish, you can sprinkle sesame seeds over the top

Bake in preheated 350F oven for 50 – 55 minutes or until toothpick inserted into the centre comes out clean.

Let stand on a wire rack for about 5 minutes before slicing

This bread may be prepared ahead of serving, tastes the best when warm When you need to warm it up, wrap the loaf in aluminum foil and reheat at 325F for about 15-20 minutes.
