Old Fashioned Pot Roast

img_0236This recipe will give you a melt-in-your-mouth pot roast that your family will love and you can boast about. Seasoned with rosemary,mustard and thyme, it is very easy to make and always a hit.

Old Fashioned Pot Roast:

1 lb. of potatoes, quartered

1 cup of fresh baby carrots

1 boneless beef chuck roast (3-4 lbs.)

1/4 cup Dijon mustard

2 teaspoons of dried rosemary,crushed

1 teaspoon of garlic salt

1/2 teaspoon of dried thyme

1/2 teaspoon of pepper

1/3 cup of chopped onion

1-1/2 cups of beef broth

Place potatoes and carrots in a 5-qt. slow cooker. Cut roast in half. In small bowl, combine mustard,rosemary, garlic salt, thyme and pepper; rub over meat.

Place in slow cooker; top with onion and broth. Cover and cook on low for 6-8 hours or until meat and vegetables are tender.
