This is another one of my favourite “quick and easy” recipes. It does use prepared baking mix but you can use my recipe for biscuits from scratch instead – it’s actually just as easy.

Pizza Biscuit Recipe

Ingredients:

  • 2-1/2 cups of baking mix
  • 1 cup of sour cream
  • 4 oz. of Cheddar (grated 1 cup)
  • 1/2 cup of chopped cooked ham

Directions:

  1. Preheat oven to 400F.
  2. In mixing bowl, combine baking mix, sour cream, cheese and ham.
  3. Stir together to form soft dough.
  4. Turn dough onto lightly floured work surface and pat into 3/4 thick layer.
  5. Cut out biscuits with cutter.
  6. Place on baking sheet.
  7. Bake for 12 – 15 minutes or until golden brown.
  8. Serve hot.

Lemon Tea Biscuits Recipe

Lemon biscuitsThese biscuits are perfect for a warm summer day breakfast or brunch – or for “anytime” snack! The turn out beautifully flaky and have a subtle but pleasant tang that comes from both the lemon juice in the dough and the accompanying lemon butter. Add them to your next breakfast or brunch menu or serve them as an afternoon treats!

Ingredients:

  • 4 cups of all purpose flour
  • 1/4 cup of sugar
  • 1-1/2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 2/3 cup of shortening
  • 1 cup of milk
  • 6 tablespoons of lemon juice

Lemon Butter:

  • 1/2 cup of softened butter
  • 4-1/2 teaspoons of lemon juice
  • 2 teaspoons of grated lemon peel
  • 1 tablespoon of finely chopper onion (optional)

Directions:

  1. In a large bow, combine the flour, sugar, baking soda and salt.
  2. Cut in the shortening until mixture resembles fine crumbs.
  3. Stir in the milk and lemon juice until just moistened.
  4. Turn the dough onto floured surface and knead 8-10 times.
  5. Roll out to 1/2 inch thickness.
  6. Cut with a floured 2-1/2 inch biscuit cutter.
  7. Place 2 inches apart on ungreased baking sheet.
  8. Bake at 450F for 8-10 minutes or until golden brown.

To make the lemon butter:

  1. In a small bowl, combine all ingredients until blended.
  2. Serve with warm biscuits.

Definitely on the top of the "Comfort Foods" list - try the recipe today!

It is now almost two years ago that I first posted the Homemade Beef Stew Recipe. Comments have been pretty unanimous – “Just like grandma used to make!” And that makes me very proud – my own grandma taught me to cook and bake and I will always be grateful for that.

This recipe is perfect for this time of year – I would most definitely place it at the top of the “Comfort foods” list. Add homemade biscuits or freshly baked bread – and you have a winner!

Cranberry Orange Scones Recipe

I love cranberries! Not only are they good for you, they are a great addition to all kins of recipes. These scones were delicious – combination of cranberries and orange flavours is really something very special. I am going to make these for Christmas morning breakfast/brunch for sure Enjoy!

Cranberry Orange Scones:

Ingredients:

  • 1-1/2 cups of flour
  • 3 tablespoons of sugar
  • 2-1/2 teaspoons of baking powder
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 1 teaspoons finely grated orange zest
  • 5 tablespoons of cold, unsalted butter, cut into small pieces
  • ½ cup of dried cranberries
  • 2/3 cup of buttermilk (add 1-2 tablespoons more if necessary)

Directions:

  1. Preheat oven to 400F
  2. Line a baking sheet with parchment or waxed paper
  3. In a large bowl, stir together flour, sugar, baking powder, baking soda, salt and orange zest
  4. With a pastry blender or two knives, cut butter into flour mixture until it looks like coarse oatmeal
  5. Stir in dried cranberries
  6. Make a well in the centre of flour mixture
  7. Add butter milk and stir until just combined – do not overmix. Add a little more butter milk if dough is too dry to work with
  8. Transfer dough to a lightly floured surface
  9. Shape into a 8-inch round
  10. Transfer onto baking sheet
  11. Cut circle into wedges and space them about ½ inch apart (to prevent sticking, dust knife with flour)
  12. Bake until golden, about 18-20 minutes

Best Ever Tea Biscuits

I have made lots of different tea biscuits, but couple days ago I decided to add to our dinner of pasta with grilled chicken and vegetables and bake fresh cheese biscuits. They turned out beautiful and were so very tasty, I just have to share the recipe.

Great addition to any dinner or lunch menu - or just as a snack

Best Ever Cheese Biscuits:

Ingredients:

  • 2 cups of flour
  • 4 teaspoons of baking powder
  • 1 teaspoon of salt (you can reduce or totally omit the salt if you wish)
  • 1/4 cup of shortening
  • 1 cup of milk
  • 1 – 1/2 cups of cheddar cheese, cut into small cubes or shredded
  • Melted butter to brush on the biscuits after baking

Directions:

  1. Mix flour, baking powder and salt together.
  2. Cut the shortening in with pastry knife or 2 butter knives until it resembles coarse oatmeal
  3. Fold in your cheese cubes until they are nicely coated with flour mixture
  4. Make a well in the centre of dry ingredients and add milk
  5. When you added all the milk, stir the dough until it starts coming free off the side of your bowl
  6. Turn the dough onto floured board and knead gently for a few minutes
  7. Pat the dough into a round shape to fill bottom of a pie plate
  8. Cut into 6 pieces (or 8 if you want smaller biscuits) with pizza cutter
  9. Bake at 450F for about 15 minutes or until biscuits are golden brown
  10. Take out of the oven, leave for about 5 minutes and then brush tops with melted butter

These cheese biscuits turn out beautiful and taste even better

How to Make Great Biscuits

Fresh from the oven tea biscuits are one of best treats you can serve to your family with just about any meal. And believe it – they are very easy to make and just a few basic ingredients will do. Adding different flavours is relatively easy as well – and if you keep baking them, you will find out just what is good and what isn’t such a good idea to add. I have put together easy directions and some variation you can try today.

Quick Golden Biscuits:

Ingredients:

  • 2 cups of flour
  • ½ teaspoon of salt
  • 4 teaspoons of baking powder
  • 4 tablespoon of shortening
  • 1 cup of milk

Directions:

  1. Combine flour, salt and baking powder
  2. Cut in shortening with pastry cutter or 2 butter knives.
  3. Add milk
  4. Stir lightly with a wooden spoon until you can form a loose ball
  5. Put on floured surface and knead gently
  6. Flatten dough into rectangle and fold over (folding it will make your biscuits higher
  7. Remember – you can adjust the amounts of shortening and milk to your preference – little more shortening or milk will make the biscuits moister. Also – a pinch more baking powder will make higher biscuits.
  8. Cut out rounds and turn, lightly squeezing each biscuit until 1 to 1-1/2 inches high
  9. Put your biscuits on ungreased baking sheet and bake at 350F until golden brown. To make sure that the bottoms don’t get too dark, double your baking sheet.

Variations:

Butter Biscuits: Substitute butter for the shortening

Cheddar Biscuits: Add shredded cheddar cheese

Bacon and Cheese Biscuits: Add precooked, crumbled bacon and shredded cheddar cheese

Whole Wheat Biscuits:  Replace white flour with whole wheat flours

Raisin Biscuits: Add raisins at the flour mixing stage

Cinnamon Biscuits: Roll out the dough into rectangle and sprinkle on brown sugar and cinnamon. Roll into rounds and cut into slices no less that 1 inch thick. You can ice these with butter icing when cooled.

Casserole Topping: Top casseroles with biscuit crust and dot with butter to add a real homemade taste to your casseroles. Cook your casserole as you normally would and place the biscuit crust on top about 15-20 minute4s before you are ready to take it out of the oven.

Dumplings: You can use biscuit recipe to make dumplings., but substitute butter or marganrine for the shortening.
