There is something to be said about sticking to tradition – and that is why I put this menu together for you.

Start with a very easy to make Caesar Salad, add the thickest, juiciest, biggest T-Bone sSeak, grilled to perfection, serve with it Baked Potatoes with a special twist to the usual recipe, try a little change for Corn on the Cob and finish your favourite guy off with an incredible Triple Citrus Cheesecake. Now that spells S-A-T-I-S-F-A-C-T-I-O-N in my book!

Easy Caesar Salad

Easy Caesar Salad

You cannot go wrong serving Caesar Salad anytime – especially as a prelude to a juicy steak! I love making my Caesar salad from scratch and the one advantage I have is that we live petty much in farmer’s country with easy access to just picked and deliciously fresh romaine lettuce. The other thing I demand on doing is making my own dressing with lots of garlic – to me, the right Caesar salad is the one you can smell from at least 20 feet away. And I can also tell you a little secret that an old Italian friend of mine told me: put croutons into your Caesar bowl (did you know you need to have a wooden bowl designated for this?) and pour your dressing over them. Then add lettuce in portions which you sprinkle with Parmesan cheese and gently toss with your hands. Repeat until you have added all your lettuce, then sprinkle generously over the top, add bacon pieces (freshly made of course) and you are ready to serve!

Grilled T-Bone Steak

Grilled T-Bone Steak

You can’t get away from this one – I believe every guy should get the biggest, juiciest, tenderest T-Bone steak you can find! That truly is tradition – and adding freshly grilled or sauteed mushrooms to it is a must in our household (sometime I even add onions and saute them with mushroom with s little bit of either barbecue or soy sauce in the mixture)

Easy Baked Potatoes

Easy Baked Potatoes

These baked potatoes will take you less than 30 minutes to prepare and the secret here is not only cheddar cheese, but a touch of Dijon mustard – just give the potato a little bit more of what we call – a kick!

Corn on the Cob

Corn on the Cob

There are so many ways to prepare corn on the cob – you don’t just have to throw it into a ot of boiling water (but if you do, try adding a little sugar to the water – it will give your corn a nice sweet taste) First – find out what to look for when you are choosing your corn and than consider making it a Pepper Corn of Mexican Mayo variation. You will be pleasantly surprised at the result!

Triple Citrus Cheesecake

Triple Citrus Cheesecake

Some guys like their desserts sweet, sweet, sweet – and others do prefer tart, citrus taste. Well – this triple citrus cheesecake has the mixture of those tastes – the combination of lemon, lime and orange results in a beautiful citrus taste and this cheesecake is incredibly light – they will come for seconds without a doubt!

Have you decided what you  going to make for that special dad in your life this Father’s Day yet ? I know that  there are guys who love a bit of gourmet touch to their dinner – so if that is what you are planning, you can find complete menu with recipe on this site. Just check out Complete Father’s Day Menu – it’s is looking pretty comlex, but believe me, all the recipes are easy and fully tested to succeed. You will treat you special guy to salad first – and Seven Layer Salad is almost a meal in itself, so make sure he doesn’t have a huge plate of it – there is a whole lot more to come! Appetizer would be the next item on the menu and I highly recommend Chili Barbecue Shrimp. This recipe is fast and easy for sure and the result is delicious shrimp with a bit of kick to it – just the way men like it! And what would that special Father’s Day dinner be without a nice, big, juicy steak? The one and only – T-Bone Steak, grilled to perfection. And of course – there has to be something to go with it – try French Fries with Mustard Mayonnaise and Steamed Green Beans - you can’t go wrong here.

I am pretty sure you will have to give dad a little break at this point of the feast – but be ready to serve dessert shortly. Chocolate Strawberry Shortcake will not be refused! You will probably need to add a cup of freshly made coffee and then just watch that smile of satisfaction on dad’s face!

Have a wonderful Father’s Day celebration and please send in your comments, suggestions and experiences, your input is always welcomed and very much appreciated!

Guide to Hockey

Rating: 10.0/10 (1 vote cast)

The NHL Playoffs for the coveted Stanley Cup trophy are in a full swing and believe me – if you are going to watch hockey, this is the time to get some snacks, settle down on your couch and enjoy the excitement! Just in case you feel a bit left out because you are not quite sure what it going on there, here is a little simple help for you. My guide to hockey – the very basics of the game a bit of terminology used. That is all there is to it – honestly! The game is relatively simple – get hold of the puck and do all you can to get it into your opponent’s goal net. Do that more times then the other guys – and you end up winning the Stanley Cup.

Hockey is often labeled as the world’s greatest and most exciting game. And it is easy to understand once you know the few basic rules – here is a quick guide:

First – the object of the game is to score more goals than the other team

The Ice Rink:

  • The ice surface is divided into zones by a red line in the centre and two blue lines, creating three zones
  • The area where the goal net is the “defending zone” for the team defending the net
  • The middle zone is the “neutral zone”
  • The area where the opposing net is located is the “offensive zone”
  • Standard North American ice rink is 200 feet long and 85 feet wide – European surface are slightly larger

 The Teams:

  • Each team has six players on the ice – one goaltender and five skaters.
  • The five skaters all have roles – three of them are forwards. Their job is to move the puck as fast as possible to the opponent’s defense zone and score. Two are defensemen – their job is to defend their  team’s goal net and protect the goaltender.
  • But regardless of their positions, all players – except the goaltender (he is not allowed to cross the red centre line) can go anywhere on the ice.
  • Substituting players is unlimited and can be made at any time – it does not need official’s permission and it does not have to stop the play. Player who is entering the ice surface can do it “on the fly” – meaning during the flow of play, as long as the departing player is within 5 feet of the bench and is not involved in the play.

The Game:

  • The game begins when the referee drops the puck between two opposing forwards – that’s called “faceoff”. And it is used to resume play following any stoppage of the game.
  • During the faceoff, all other players are positioned on the defensive side of the puck. There are nine designated faceoff spots – they are painted on the ice.
  • The game is played in three 20 minute periods and the clock stops during all play stoppages.

About Body Checking:

  • Player can use a shoulder, hip or torso to hit or impede an opponent – but only when the opponent is in the position of the puck.
  • A body check that targets the head is illegal as it a check to the opponent’s back if he is facing the boards.

Minor Penalties:

  • Remember that the difference between a legal check and a penalty is open to interpretation and is a source of constant dispute among players, fans and everyone else involved in the game.
  • Minor penalties are called for obstruction of an opponent, such as tripping, holding, hooking or other interference.
  • They are also called for a dangerous use of the stick, such as slashing, spearing, high-sticking or cross-checking. Included are also penalties called for dangerous physical actions, such as elbowing, checking from behind, kneeing and roughing.
  • A player who gets charged with minor penalty has to leave the ice without substitution.
  • The penalty ends if a goal is scored by the opposing team

Major Penalties:

  • Major penalties are more severely punished and the most common major penalty is for fighting. If both players involve receive major penalty, substitution is allowed.
  • A player involved in a serious offense such as causing physical injury or an attempt to injure another player can be ejected from the game. If that happens, a teammate is assigned to serve the major penalty and no substitution is allowed.

Offside:

  • Offside is called if a player precedes the puck into the offensive zone – play is stopped and faceoff takes place in the neutral zone.
  • Also – a pass made across the blue line and the centre line is ruled as an offside pass – play is stopped and the faceoff takes place in the originating point of the pass.

Icing:

  • Icing means shooting the puck to the end of the ice from behind the centre red line. It is considered to be a delaying tactic and it will result in a stoppage of play and faceoff in the offending team`s defensive zone.
  • The purpose of icing calls is to encourage continuous game action so the referees and the linesmen interpret and apply the rule to produce the desired result.

Power Play:

  • When a penalty is called, it will result in one team having a greater number of players on ice

These are the game basics – if you would like to do a bit more studying and brushing up on your terminology, check out The Canadian Tire Hockey School website – all kinds of great information on that site plus great and simple way to read up on all the words and slangs as well.

Have fun watching hockey and make sure you keep watching this website for more information and Stanley Cup playoffs standings - your comments, suggestions and experiences are always welcomed and very much appreciated!

It is definitely a good idea to have few games ready for your Easter gathering – especially if there are children present. You can easily have these games organized ahead of time – when I do it, I have little plastic baskets filled with materials for each game ready to go on a moment’s notice. If you decide to do that, you will find out that it is very easy to call the kids together and occupy them for quite a while. And don’t be surprised if adults get involved as well – after all – being competitive is just human nature, even if it involves cupcakes and Easter Eggs!

Easter Cupcake Walk

Materials:

  • Cupcake for each child
  • Numbers taped to the floor
  • Easter basket to hold number call cards
  • Music

 How To Play:

When the music starts the children begin to walk around the room stepping on each of the numbers as they go. When the music stops the children should step on the number closest to them. A number is pulled from the Easter basket and the child standing on that number gets to choose a cupcake and return to their desk. That number is then removed from the floor and the bag. Continue until every child has a cupcake.

Egg Toss

Materials:

  • Large cardboard with Easter basket drawn on one side and a good size hole cut-out in center of basket, or a few small holes for older kids.
  • Colourful egg-shaped bean bags (Easter eggs)
  • Bucket to hold bean bags
  • Tape to mark distance line

How To Play:

Place cardboard basket a little distance from a wall with a paper box lid on floor to catch Easter egg bean bags. Mark your distance line according to age and skill of children. Line children up behind the line and place a bucket of Easter egg bean bags beside them. Give each child three tries to get their bean bag through the hole. Get all three Easter egg bean bags in and earn a ‘egg-licious’ reward.

Easter Egg Roll

Materials:

  • 1 hard-boiled Easter egg for each team (maybe a few extras)
  • 1 spoon for each team

 How To Play:

Divide children into teams. The goal is for the first person to roll the egg with the spoon to the end of the course and back. The person hands the spoon to the next person in line and the relay continues until a team finishes.

Update from Laura’s Writing Chair

I have introduced Laura few months ago – she is my friend who has cerebral palsy and writes from her wheelchair. I will not hesitate to admit that she motivates me on regular basis.

Laura has a blog website where she posts her thoughts.. and then some. Her latest post deserves to be shared – and I felt compelled to comment on it as well. It really got me thinking after I read a comment on Laura’s blog from J. I had numerous discussions with Laura on what she should blog about, what she should share and how she could be helping others. Funny – we both thought that the “helping others” meant helping those in a similar situation. Then I realized something – it is quite possible that she could be very helpful to people who are not challenged in the same way.

Read Laura’s Blog: Kids Always Say What They Want To:

So – J. feels that she is not different and her comment does make sense to a certain degree. What I am saying is that I am different – and I am not confined to a wheelchair. I am a mom, grandma, wife, friend…. And I believe that we are all different – in a different way. No two people on the face of this Earth are the same – and honestly – that is a good thing!

Bottom line: we can all learn from each other. Wheelchair or no wheelchair. All we have to do is keep our eyes and most importantly – our minds opened.

Here is my message to those in a wheelchair: next time you find yourself being stared at or ignored or being in any other unfitting situation – speak up and ask if there is anything that person wants to ask you. If you are ignored – definitely speak up (and honestly, I am surprised Laura didn’t, because she is pretty much never lost for words!)

And here is my message to those who are not in a wheelchair : next time you have a question – Ask it! And the next time you don’t know how to approach or to deal with a person in a wheelchair, please allow him or her to make you more comfortable and tell them!

So – that’s my opinion. If you have a different one, I would – as would Laura – love to hear from you!

Make Your Own Easter Eggs

Making Easter eggs can be lot of fun – especially if you get your children involved. You can create a very festive centerpiece, use them to decorate various points of your home of create small baskets your children can give away to friends and family. Here are couple more easy to make egg decorating ideas for you:

Drip Dot Eggs

Materials:

  • Boiled eggs
  • Acrylic non-toxic craft paint, your choice of colors
  • Paintbrush
  • Empty egg carton
  • Dish of water

Directions:

  1. Be sure that boiled eggs are cool and dry.
  2. Place a double folded kitchen towel and place it on the table underneath child’s hands so if the egg slips out it will have a soft cushion to land on.
  3. Place boiled eggs into an empty egg carton for stability.
  4. Place some paint onto a paper plate or a small dish or palette. Add several drops of water to the paint to thin it out.
  5. Using the paintbrush, place a generous dot of paint on top of your egg. If the paint is not thin enough to start dripping down the egg, add another generous dot. If it still doesn’t drip, dip your paintbrush in water and add to the dot on the egg until it begins dripping down the egg. Repeat this several times so that it drips down around the egg several times. Use two different colors to create your drips.
  6. Allow the drips to dry completely. If your eggs begin to stick to the cardboard egg carton, carefully loosen them and scrape off any cardboard from the egg with your fingernail, then move them to a different area of the carton to continue drying.
  7. When completely dry, carefully hold the egg upside down and paint the bottom half of the egg solid, this will cover up the end of the drips. Place the egg upside down to allow the solid area to dry. If needed, repeat with another coat and let dry again.
  8. When dry, use the handle end of a paintbrush dipped in white paint to add polka dots to your solid color. Let dry.

Easter Egg Heads

Materials:

  • Boiled eggs
  • 3-D paint or glitter glue, in a variety of colors
  • White craft glue
  • Wiggle eyes, in any size
  • Cooling rack or film canister lids
  • Marker
  • Mini bowl (optional)
  • Tweezers (optional)
  • Empty egg cartons

Directions:

You will need to decorate only one side of the egg at a time. Let the eggs dry either on egg cartons turned upside down, on a cooling rack or film canister lid. Decorate other side when first side is dry.

  1. Place egg into an empty egg carton for stability.
  2. Use glitter glue or 3-D paint to “draw” on hair. This will need to dry for several hours.
  3. If you wish to add a bow, place a small construction paper or ribbon bow into the 3-D paint or glitter glue hair before it dries all the way.
  4. Decide where you want to place the wiggle eyes and glue them in place.
  5. Add a nose by gluing on a miniature pom pom
  6. Draw on a mouth with a marker.
  7. Place on a decorative plate, an Easter basket, or make an arrangement for your table.

When you start planning your menu for the festive Easter dinner, you may want to consider including some appetizers. I usually do, because they will bridge the time before you putting finishing touches on your dinner and the time you actually serve it. It also helps to start conversations – especially if you have invited people who have not met previously. And if your appetizers are unusual and delicious, the conversation will not be a problem.

Here are a few recipes for you:

Pickled Red Beet Eggs

Ingredients:

  • 1 (15 ounce) can beets
  • 1 onion, thinly sliced
  • 12 hard cooked eggs, shelled and left whole
  • 1/4 cup white sugar
  • 1/2 cup vinegar

Directions:

  1. Drain liquid from the beets into saucepan.
  2. Place beets, onions, and eggs into a large bowl or pitcher.
  3. Pour sugar and vinegar into the saucepan with the beet liquid and bring the mixture to a boil.
  4. Reduce the heat to low, and let the mixture simmer 15 minutes.
  5. Pour the beet juice mixture over the beets, eggs, and onions.
  6. Seal the bowl or pitcher and refrigerate.
  7. Refrigerate for at least one to 3 days; the longer they are allowed to sit the better they will taste.

Prosciutto Wrapped Asparagus

Ingredients:

  • 1/2 pound prosciutto, sliced
  • 1/2 (8 ounce) package cream cheese, softened
  • 12 spears fresh asparagus, trimmed

Directions:

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Spread prosciutto slices with cream cheese.
  3. Wrap slices around 2 or 3 asparagus spears.
  4. Arrange wrapped spears in a single layer on a medium baking sheet.
  5. Bake 15 minutes in the preheated oven, until asparagus is tender.

Chicken Salad Puffs

 Ingredients:

  • 1 cup water
  • 1/2 cup butter (no substitutes)
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • Filling:
  • 2 cups finely chopped cooked chicken
  • 1 (8 ounce) can crushed pineapple, drained
  • 1/2 cup mayonnaise
  • 1/4 cup chopped celery
  • 1/4 cup thinly sliced green onions
  • 1/4 cup chopped pecans
  • 2 tablespoons sweet pickle relish
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon paprika
  • salt and pepper to taste

Directions:

    1. In a saucepan, bring water, butter and salt to a boil.
    2. Add flour all at once and stir until a smooth ball forms.
    3. Remove from the heat; let stand for 5 minutes.
    4. Add eggs, one at a time, beating well after each addition.
    5. Continue beating until smooth and shiny.
    6. Drop by rounded teaspoonfuls 2 inches apart onto a greased baking sheet.
    7. Bake at 400 degrees F for 15-20 minutes or until golden brown.
    8. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool.
    9. Split puffs and set tops aside; remove soft dough from inside.
    10. In a bowl, combine the filling ingredients; mix well.
    11. Fill puffs and replace tops.
    12. Refrigerate until serving.
    13. Refrigerate leftovers.

Children go around and ask the riddle and the second child will give the answer. If the answers are correct, the two children who are matched up then sit down. Game is over when all children have matched up the riddle to the answer.
