Beef Bourguignon Recipe

This was dinner last night – and it was delicious! I used sirloin steak – this will be even better if you use beef tenderloin. It takes a little time to prepare, but honestly – the effort is well worth it. And really – as much as Sunday dinner may traditionally be the ones you take more time to prepare and Monday is usually reserved for leftovers – making this fresh for Monday dinner really starts the week off well!

Ingredients:

  • 2-3 lbs. of sirloin steak (you can use beef tenderloin – it works great)
  • 1 small onion
  • 2 garlic cloves – smashed
  • 2 cups of mini button mushrooms
  • 1-2 tablespoons of olive oil
  • 2 cups of fresh baby carrots
  • 1-1/2 cups of pearl onions (sweet pickled)
  • 4 tablespoons of butter
  • 1 cup of sour cream
  • ½ lb. of bacon, cut into ½ inch pieces
  • Salt and freshly ground pepper
  • 2 cups of beef broth

 Directions:

  1. Heat olive oil in a pan, add beef, cut into strips about 2 inches long and ¼ thick
  2. Add finely chopped small onions and smashed garlic and season with salt and fresh ground black pepper
  3. Brown all pieces of meat evenly
  4. Add mushrooms and carrots and sauté for about 5 minutes
  5. In a separate pan, melt butter and add pearl onions
  6. Saute onions until they start turning golden brown
  7. Add pearl onions to meat mixture
  8. In a separate pan, cook bacon pieces until crisp – drain fat
  9. Add to the meat mixture along with beef broth and mix well
  10. Place mixture into a covered glass dish and place into oven, preheated to 350F
  11. Cook in the oven for 1 – 1-1/2 hours – check meat for tenderness before removing from oven
  12. Just before serving, spoon in sour cream and mix well
  13. Serve with rice or over pasta
