Delicious Homemade Salsa

You may be the one who gets their salsa from your local supermarket – and that’s OK unless you realize just how easy and inexpensive it is to make delicious salsa yourself!

Here are couple of my favourite recipes – and I can tell you that I had no problem making up larger quantity and freezing it in ziplock bags.

Chickpea and Red Pepper Salsa

Chickpea and Red Pepper Salsa:

1 – 15 oz. can of chickpeas, rinsed and roughly chopped

4 scallions, sliced

1 cup of arugula, chopped

1 jarred roasted red peppers, chopped (about 1/4 cup)

2 tablespoons of  fresh lemon juice

2 tablespoons of extra-virgin olive oil

Salt and pepper to taste

In a medium bowl, combine the chickpeas, scallions, arugula, red peppers, lemon juice, oil. salt and pepper and mix well.

Serve with your favourite dippers.

Gazpacho Salsa
Gazpacho Salsa

Gazpacho Salsa:

2 plum tomatoes, seeded and diced

1 small yellow bell pepper, diced

1 cucumber – diced

1 tablespoon of red wine vinegar

1 tablespoon of extra-virgin olive oil

Salt and pepper to taste

In a medium bowl, combine the tomatoes,. bell pepper, cucumber, onion, vinegar, oil, salt and pepper and mix well.

Serve with your favourite dippers.
